I decided to make the Chicken Pad Thai and the Red Thai Curry. Please note my flash was not on when I took the pictures. It was so yummy!!! Below is the recipe for the Pad Thai:

Chicken Pad Thai

4 ounces Thai Kitchen® Stir-Fry Rice Noodles
2 tablespoons vegetable oil, divided
1 egg, lightly beaten
4 ounces boneless skinless chicken breasts, cut into thin strips
6 tablespoons Thai Kitchen® Original Pad Thai Sauce
2 green onions, thinly sliced
1/2 cup bean sprouts
1/4 cup coarsely chopped unsalted peanuts
Fresh cilantro sprigs and lime wedges

Directions:
  • BRING 4 cups water to boil in medium saucepan. Add rice noodles; cook 3 to 5 minutes or until noodles are tender but firm. Rinse under cold water; drain well. Set aside.
  • HEAT 1 tablespoon of the oil in large skillet or wok on medium-high heat. Add egg; scramble until set. Remove from skillet. Add remaining 1 tablespoon oil to skillet. Add chicken; stir fry until cooked through. Add rice noodles, Pad Thai sauce and green onions; stir fry 3 to 4 minutes or noodles are tender.
  • STIR in bean sprouts and scrambled egg. Place noodle mixture on serving platter. Sprinkle with peanuts. Serve with cilantro sprigs and lime wedges.
The Red Curry recipe can be found here!  I forgot to take pictures of it.  We are big curry lovers in this house, so this was just as huge of a hit! The Pad Thai was to die for.  My 3 year old son and 5 year old daughter tried it.  They preferred the noodles over everything else.  We will definitely making this again soon!  Simply Asia and Thai Kitchen offer a wide range of recipes and meal ideas!  So if you feel like skipping V-Day in favor of a Chinese New Year celebration, head on over to SimplyAsia.com it is full of Chinese New Year resources.
